Passatelli in Broth Recipe
Ingredients:
- 2 cups bread crumbs
- 1 cup grated Parmesan cheese
- 1 teaspoon grated nutmeg
- 2 teaspoons lemon zest
- 4 eggs
- 4 cups chicken broth
- salt and pepper to taste
Instructions:
- In a large mixing bowl, combine bread crumbs, Parmesan cheese, nutmeg, and lemon zest. Mix well.
- Add eggs to the breadcrumb mixture and mix thoroughly until combined. The mixture should be sticky but not too wet.
- Bring chicken broth to a gentle simmer in a large pot.
- Form the mixture into small, thin sticks or dumplings.
- Drop the passatelli in the hot broth and cook for about 3-4 minutes or until the passatelli rise to the surface.
- Season with salt and pepper to taste. Serve hot.
Serving suggestion:
Passatelli in broth makes a great appetizer, starter, or light main course. Sprinkle some more grated Parmesan cheese on top for extra flavor. Serve with a side salad or some crusty bread.
