Passatelli in Broth Recipe

Ingredients:

  • 2 cups bread crumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon grated nutmeg
  • 2 teaspoons lemon zest
  • 4 eggs
  • 4 cups chicken broth
  • salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine bread crumbs, Parmesan cheese, nutmeg, and lemon zest. Mix well.
  2. Add eggs to the breadcrumb mixture and mix thoroughly until combined. The mixture should be sticky but not too wet.
  3. Bring chicken broth to a gentle simmer in a large pot.
  4. Form the mixture into small, thin sticks or dumplings.
  5. Drop the passatelli in the hot broth and cook for about 3-4 minutes or until the passatelli rise to the surface.
  6. Season with salt and pepper to taste. Serve hot.

Serving suggestion:

Passatelli in broth makes a great appetizer, starter, or light main course. Sprinkle some more grated Parmesan cheese on top for extra flavor. Serve with a side salad or some crusty bread.
