Pea Risotto Recipe

Ingredients:

  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 4 cups vegetable broth
  • 1 cup fresh or frozen peas
  • 3/4 cup freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions:

  1. Heat the olive oil and butter in a large pot over medium heat. Add the onion and garlic and cook until soft, about 5-7 minutes.
  2. Add the Arborio rice and stir until the rice is coated in the oil and butter mixture, about 2-3 minutes.
  3. Add the dry white wine and stir until all the liquid is absorbed into the rice.
  4. Begin adding the vegetable broth, one cup at a time, stirring constantly until each cup of broth is absorbed before adding the next cup. Continue until all the broth has been used and the rice is tender, about 20-30 minutes.
  5. Add the peas and stir until they are heated through, about 2-3 minutes.
  6. Remove from heat and stir in the Parmesan cheese until melted and well combined. Season with salt and black pepper to taste.
