Pho Soup Recipe

Ingredients:

  • 8 cups of beef broth
  • 2 inches of ginger root, peeled and sliced in half
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cinnamon stick
  • 5 whole cloves
  • 1 star anise
  • 1 lb of beef sirloin, thinly sliced
  • 8 oz of rice noodles, cooked
  • 2 cups of bean sprouts
  • 4 scallions, thinly sliced
  • 1 bunch of cilantro, chopped
  • 1 lime, cut into wedges
  • Hoisin sauce and hot chili sauce to taste

Directions:

  1. In a large pot, add the beef broth, ginger, onion, garlic, cinnamon stick, cloves, and star anise. Bring to a boil and then reduce to a simmer for about 30 minutes. Skim off any foam that rises to the top.
  2. While the broth is cooking, slice the beef sirloin and cook the rice noodles according to the package instructions. Set aside.
  3. Strain the broth through a fine mesh strainer and discard the solids. Return the broth to the pot and bring to a boil.
  4. To serve, fill bowls with cooked rice noodles, sliced beef, and pour the hot broth over it. Top with bean sprouts, scallions, cilantro, and a squeeze of lime. Serve with hoisin sauce and hot chili sauce on the side.
