Pineapple Christmas Ham: Caribbean Christmas Ham Recipe

Ingredients:

  • 1 cured spiral cut ham, bone-in
  • 1 cup brown sugar
  • 1 cup pineapple juice
  • 1 can sliced pineapple
  • 1/2 cup honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper (optional)

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. Remove the packaging and any covering from the ham.
  3. Score the ham with shallow cuts in a criss-cross pattern.
  4. Place the ham in a roasting pan lined with aluminum foil.
  5. In a mixing bowl, combine brown sugar, honey, pineapple juice, ground cinnamon, ground cloves, ground allspice, ground nutmeg, and cayenne pepper if desired. Mix until combined.
  6. Brush the ham with the mixture, making sure to coat all sides.
  7. Arrange sliced pineapples on top of the ham, securing with toothpicks if necessary.
  8. Cover the ham with aluminum foil and bake in the oven for 30 minutes.
  9. Remove the foil and continue cooking the ham for an additional 30 minutes, or until the internal temperature reaches 140°F (60°C).
  10. Remove from oven and let the ham rest for 10-15 minutes before serving.
