Pistachio Roll Skewers Recipe

Ingredients:

  • 1 cup shelled pistachios
  • 1/4 cup honey
  • 1/4 cup almond meal
  • 1/4 tsp salt
  • 12 wooden skewers

Instructions:

  1. Preheat oven to 350°F.
  2. In a food processor, pulse the shelled pistachios until they are finely chopped but not ground into a paste.
  3. In a medium bowl, mix the finely chopped pistachios with honey, almond meal, and salt. The mixture should be slightly sticky and pliable.
  4. Divide the mixture into 12 equal portions and roll each portion into a small log shape. Press the logs onto the skewers, making sure they are secure and the skewers are in the center of each log.
  5. Place the skewers on a baking sheet lined with parchment paper and bake for 10-12 minutes or until the pistachio logs are lightly golden brown. Let cool slightly before serving.
