Plaice En Papillote with Root Vegetables

Ingredients:

  • 2 Plaice fillets
  • 1 Carrot
  • 1 Parsnip
  • 1 Red onion
  • 1 Lemon
  • 1 tablespoon Olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the carrots and parsnips into thin slices. Peel and cut the red onion into thin wedges.
  3. Cut two large sheets of parchment paper (12 inches/30 cm). Fold each sheet crosswise and open it again, to create a crease.
  4. Place half of the root vegetables on one side of the crease of each sheet.
  5. Season the root vegetables with salt and pepper, and then drizzle with olive oil.
  6. Place one Plaice fillet on top of each bed of vegetables.
  7. Cut the lemon in half and squeeze juice over each fillet.
  8. Season the fish with salt and pepper to taste.
  9. Bring the other half of the parchment paper over the fish and vegetables. Starting at one corner, fold and crease the edges together, so that it forms a sealed packet.
  10. Place the packets on a baking dish or sheet.
  11. Bake in the oven for 20 minutes, until the fish is cooked through.
  12. Remove the baking dish or sheet from the oven.
  13. Carefully open the packets and transfer the fish and vegetables to plates.
