Plaice En Papillote with Root Vegetables
Ingredients:
- 2 Plaice fillets
- 1 Carrot
- 1 Parsnip
- 1 Red onion
- 1 Lemon
- 1 tablespoon Olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the carrots and parsnips into thin slices. Peel and cut the red onion into thin wedges.
- Cut two large sheets of parchment paper (12 inches/30 cm). Fold each sheet crosswise and open it again, to create a crease.
- Place half of the root vegetables on one side of the crease of each sheet.
- Season the root vegetables with salt and pepper, and then drizzle with olive oil.
- Place one Plaice fillet on top of each bed of vegetables.
- Cut the lemon in half and squeeze juice over each fillet.
- Season the fish with salt and pepper to taste.
- Bring the other half of the parchment paper over the fish and vegetables. Starting at one corner, fold and crease the edges together, so that it forms a sealed packet.
- Place the packets on a baking dish or sheet.
- Bake in the oven for 20 minutes, until the fish is cooked through.
- Remove the baking dish or sheet from the oven.
- Carefully open the packets and transfer the fish and vegetables to plates.
