Poivrade Artichokes and Roast Lamb Recipe
Ingredients:
- 4 artichokes
- 500g of lamb leg
- 4 garlic cloves, minced
- 1 tablespoon of fresh rosemary, chopped
- 3 tablespoons of olive oil
- 2 tablespoons of red wine vinegar
- Salt and black pepper to taste
Instructions:
- Preheat your oven to 180°C (356°F).
- Toss the lamb with 2 tablespoons of olive oil, minced garlic, chopped rosemary, salt, and black pepper. Mix well and let it sit for about 10 minutes at room temperature.
- Clean and prepare the artichokes by removing the tough outer leaves and trimming the tips of the leaves. Cut off the top part of the artichoke and remove the fuzzy part in the center. Cut into quarters and place them in a bowl of water with lemon juice.
- Heat a large pan over medium heat. Add the remaining olive oil and sauté the artichokes for about 5 minutes until they are slightly browned on all sides.
- Add red wine vinegar to the pan and deglaze it. Let it cook for another minute and then transfer the artichokes to a baking dish.
- Place the lamb on the same pan you cooked the artichokes in and sear it for about 5 minutes on all sides.
- Place the lamb on top of the artichokes in the baking dish and bake for about 30-40 minutes, depending on how well-done you like your lamb.
- Remove the lamb and artichokes from the oven and let it rest for a few minutes before carving and serving.
Serving Suggestion:
Serve the Poivrade artichokes and roast lamb with a side salad or some roasted vegetables. You can drizzle the lamb with some of the pan juices and serve with a glass of your favorite red wine.
