Ingredients
- 4 skin-on chicken thighs
- 1/2 cup pomegranate juice
- 3 tablespoons honey
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F/190°C.
- In a small bowl, whisk together the pomegranate juice, honey, balsamic vinegar, garlic, thyme, cayenne pepper, salt, and black pepper. Set aside.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Season the chicken thighs with salt and pepper on both sides, then add them to the skillet skin-side down.
- Cook for 5-6 minutes until the skin is crispy and golden brown.
- Flip the chicken thighs over and pour the pomegranate mixture over them.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F/74°C.
