Ingredients

  • 4 skin-on chicken thighs
  • 1/2 cup pomegranate juice
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F/190°C.
  2. In a small bowl, whisk together the pomegranate juice, honey, balsamic vinegar, garlic, thyme, cayenne pepper, salt, and black pepper. Set aside.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Season the chicken thighs with salt and pepper on both sides, then add them to the skillet skin-side down.
  5. Cook for 5-6 minutes until the skin is crispy and golden brown.
  6. Flip the chicken thighs over and pour the pomegranate mixture over them.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F/74°C.
  8. Remove from the oven and let rest for 5 minutes before serving.
