Ingredients:

  • 1 pound pork tenderloin
  • 1 tablespoon sesame oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small zucchini, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 can coconut milk (13.5 oz)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon curry powder

  • 1/4 tsp black pepper
  • Bamboo skewers

Instructions:

  1. Cut the pork tenderloin into thin strips, about 1/4-inch thick by 2 inches long.
