Pork Stew – Delicious
Ingredients:
- 2 pounds boneless pork shoulder, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 3 medium carrots, cut into 1-inch pieces
- 2 medium potatoes, peeled and cut into 1-inch pieces
- 1 cup frozen peas
- Salt and pepper, to taste
Directions:
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the pork cubes and brown them on all sides, about 5 minutes.
- Add the onion and garlic to the pot and cook until the onion is soft, about 3 minutes.
- Pour in the beef broth and red wine and bring to a simmer.
- Add the tomato paste, thyme, and bay leaf to the pot and stir to combine.
- Reduce heat to low, cover the pot, and let simmer for 1 hour.
- Add the carrots and potatoes to the pot and continue cooking until the vegetables are tender, about 30 minutes.
- Stir in the frozen peas and cook until heated through, about 5 minutes.
- Season the stew with salt and pepper, to taste.
Serving Suggestion:
Serve the pork stew with crusty bread on the side, and garnish with chopped fresh parsley or thyme, if desired. Enjoy with a glass of red wine for a hearty and satisfying meal.
