Pork Stew – Delicious

Ingredients:

  • 2 pounds boneless pork shoulder, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 3 medium carrots, cut into 1-inch pieces
  • 2 medium potatoes, peeled and cut into 1-inch pieces
  • 1 cup frozen peas
  • Salt and pepper, to taste

Directions:

  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Add the pork cubes and brown them on all sides, about 5 minutes.
  3. Add the onion and garlic to the pot and cook until the onion is soft, about 3 minutes.
  4. Pour in the beef broth and red wine and bring to a simmer.
  5. Add the tomato paste, thyme, and bay leaf to the pot and stir to combine.
  6. Reduce heat to low, cover the pot, and let simmer for 1 hour.
  7. Add the carrots and potatoes to the pot and continue cooking until the vegetables are tender, about 30 minutes.
  8. Stir in the frozen peas and cook until heated through, about 5 minutes.
  9. Season the stew with salt and pepper, to taste.

Serving Suggestion:

Serve the pork stew with crusty bread on the side, and garnish with chopped fresh parsley or thyme, if desired. Enjoy with a glass of red wine for a hearty and satisfying meal.
