Potato Blinis with Haddock and Olive Sauce Recipe

Ingredients

  • 200g smoked haddock fillet
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 2 large potatoes, peeled and cooked
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 cup milk
  • 1/4 cup black olives, pitted and chopped
  • 2 garlic cloves, minced
  • 1 tbsp. capers, rinsed and chopped
  • 2 tbsp. olive oil
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cut the haddock in small pieces and set aside.
  2. Heat the olive oil and butter in a skillet over medium heat. Add the haddock and cook for 5-6 minutes until cooked through and starting to brown. Remove from the heat and set aside.
  3. In a bowl, mash the cooked potatoes with a fork or potato masher. Add the egg, flour, baking powder, milk, salt, and pepper, and mix until well combined.
  4. Heat a non-stick skillet over medium heat and brush it with a little olive oil. Spoon in 1-2 tablespoon of the potato mixture to make small blinis and cook for 1-2 minutes on each side until golden. Set aside and repeat with the remaining mixture.
  5. In a small pan, heat the olive oil and add the garlic and olives. Cook for 2-3 minutes until fragrant, then add the capers and parsley. Stir well and remove from the heat.
  6. To serve, place the potato blinis onto a serving plate, top each with a piece of haddock, and drizzle with the olive sauce. Serve hot.
