Potato Croquettes with Ham

Ingredients:

  • 4 large potatoes, peeled and quartered
  • 1 cup diced ham
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions:

  1. Boil the potatoes in a pot of salted water until soft, about 20-25 minutes.
  2. Drain the potatoes and mash them with a fork or potato masher until smooth.
  3. Add the diced ham, Parmesan cheese, chopped parsley, salt, and pepper to the mashed potatoes and mix well.
  4. Shape the potato mixture into small croquettes and roll them in flour, shaking off any excess.
  5. Dip the croquettes in the beaten eggs and then coat them with breadcrumbs.
  6. In a large frying pan, heat enough vegetable oil to cover the bottom of the pan to a medium heat.
  7. Cook the croquettes in the hot oil in batches, turning occasionally, until golden brown and crisp on all sides, about 3-4 minutes per side.
  8. Remove the croquettes from the pan with a slotted spoon and drain on paper towels to remove any excess oil.
  9. Serve the potato croquettes with ham hot, garnished with additional chopped parsley if desired.

Verdict:

These potato croquettes with ham are the perfect comfort food. The crispy exterior gives way to a creamy filling that is packed with flavor.

Serving Suggestions:

These croquettes make a great appetizer or side dish for any meal. Serve them with a dipping sauce like aioli or ranch dressing for an extra flavor boost. They would also be great tossed in a salad for a crispy addition.
