Potato Rolls with Raclette du Valais AOP
Ingredients:
- 4 medium-sized potatoes
- 1 1/2 cups all-purpose flour
- 2 tbsp butter, melted
- 1 tbsp sugar
- 1 tsp salt
- 1 package instant yeast (2 1/4 tsp)
- 1/2 cup warm water
- 1 egg, beaten
- 1/2 lb Raclette du Valais AOP cheese, sliced
Instructions:
- Peel and cube the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and mash until smooth.
- In a large mixing bowl, combine mashed potatoes, flour, melted butter, sugar, salt, yeast, and warm water. Mix until a dough forms.
- Knead the dough on a floured surface for 5-10 minutes, until smooth and elastic.
- Place the dough in a greased bowl and cover with plastic wrap or a damp towel. Let rise in a warm place for 1 hour, or until doubled in size.
- Punch down the dough and divide into 12 equal pieces. Roll each piece into a ball and place on a greased baking sheet.
- Cover the rolls and let them rise for another 30-45 minutes, or until doubled in size.
- Preheat the oven to 375 F. Brush the rolls with beaten egg and bake for 20-25 minutes, or until golden brown.
- Remove the rolls from the oven and let cool for 5-10 minutes. Slice each roll in half and place a slice of Raclette du Valais AOP cheese on the bottom half of each roll.
- Place the roll halves with cheese under the broiler and broil until the cheese is melted and bubbly, about 2-3 minutes.
- Place the top half of each roll over the melted cheese and serve warm.
