Potato rolls with Raclette du Valais AOP

Potato Rolls with Raclette du Valais AOP

Ingredients:

  • 4 medium-sized potatoes
  • 1 1/2 cups all-purpose flour
  • 2 tbsp butter, melted
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 package instant yeast (2 1/4 tsp)
  • 1/2 cup warm water
  • 1 egg, beaten
  • 1/2 lb Raclette du Valais AOP cheese, sliced

Instructions:

  1. Peel and cube the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and mash until smooth.
  2. In a large mixing bowl, combine mashed potatoes, flour, melted butter, sugar, salt, yeast, and warm water. Mix until a dough forms.
  3. Knead the dough on a floured surface for 5-10 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl and cover with plastic wrap or a damp towel. Let rise in a warm place for 1 hour, or until doubled in size.
  5. Punch down the dough and divide into 12 equal pieces. Roll each piece into a ball and place on a greased baking sheet.
  6. Cover the rolls and let them rise for another 30-45 minutes, or until doubled in size.
  7. Preheat the oven to 375 F. Brush the rolls with beaten egg and bake for 20-25 minutes, or until golden brown.
  8. Remove the rolls from the oven and let cool for 5-10 minutes. Slice each roll in half and place a slice of Raclette du Valais AOP cheese on the bottom half of each roll.
  9. Place the roll halves with cheese under the broiler and broil until the cheese is melted and bubbly, about 2-3 minutes.
  10. Place the top half of each roll over the melted cheese and serve warm.
