Potato Vol-au-Vent Recipe

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 1 large potato, cubed
  • 1/2 cup of mushrooms, sliced
  • 1/4 cup of onion, chopped
  • 1 clove of garlic, minced
  • 1/4 cup of heavy cream
  • 2 tablespoons of fresh parsley, chopped
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potato, then cook in boiling water until tender.
  3. Meanwhile, heat the olive oil in a skillet over medium heat. Add the sliced mushrooms, garlic, and onion and sauté until tender.
  4. Add the cooked potatoes and heavy cream to the skillet. Stir well and cook for 2-3 minutes.

  6. Roll out the puff pastry and cut out 4 circles.
  7. Place the circles onto a baking sheet lined with parchment paper.
  8. Using a sharp knife, make a circle incision in the middle of each puff pastry circle without cutting through the bottom.
  9. Fill each circle with the potato-mushroom mixture, making sure to not overfill.
  10. Bake in the oven for 15-20 minutes, or until the puff pastry is golden brown.
