Ingredients:

  • 200g Swiss chard
  • 100g bacon, diced
  • 150g flour
  • 4 eggs
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 50g prunes, pitted and chopped
  • 50g dried apricots, chopped
  • 50g raisins
  • 10g parsley, chopped
  • 10g chives, chopped
  • 10g basil, chopped
  • 10g thyme, chopped
  • 10g marjoram, chopped
  • Salt and pepper to taste
  • Butter for greasing

Instructions:

  1. Preheat the oven to 180°C.
  2. Blanch Swiss chard in salted boiling water for 2 minutes, then drain, cool and chop.
  3. In a large bowl, mix the flour and eggs to obtain a smooth batter.
  4. Sauté the bacon, onion and garlic in a pan until lightly browned. Add the Swiss chard, prunes, apricots and raisins, then cook for 10 minutes over low heat.
  5. Add all the herbs to the pan and cook for another 5 minutes.
  6. Season with salt and pepper to taste.
  7. Mix the contents of the pan with the batter.
  8. Grease a baking dish with butter and pour the mixture in.
  9. Bake for 30-35 minutes or until golden brown.
  10. Serve hot or cold.
