Puff Pastry with Brandade, Stripped Cod and Peppers Recipe

Ingredients

  • 1 sheet of ready-made puff pastry
  • 200g brandade
  • 200g stripped cod
  • 1 red pepper
  • 1 yellow pepper
  • 2 tablespoons olive oil
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 200°C/ 180°C Fan/Gas mark 6.
  2. Cut the peppers into thin strips.
  3. Place the pepper strips on a baking tray, add the olive oil and toss to coat.
  4. Roast in the oven for 15-20 minutes, or until the peppers are soft and slightly charred.
  5. Meanwhile, cut the puff pastry sheet into 4 equal squares.
  6. Spoon the brandade onto two of the squares, leaving a 1cm border around the edge.
  7. Top each brandade-filled square with the stripped cod.
  8. Brush the edges of the two remaining squares with beaten egg.
  9. Place one of the egg-washed squares on top of each cod-covered square and press the edges together to seal.
  10. Brush the tops with beaten egg and bake in the oven for 15-20 minutes, or until golden and puffed up.
  11. Serve with the roasted peppers.
