Quail with Raisins and Sesame Recipe

Ingredients

  • 4 quails
  • 1/2 cup raisins
  • 1/4 cup sesame seeds
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/4 cup white wine
  • 1/4 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse quails and pat dry with paper towels then season both the outside and the cavity of each bird with salt and pepper.
  3. In a saucepan, combine raisins, honey, white wine, and chicken broth. Cook over medium-high heat for about 5-7 minutes, or until the liquid has reduced by half. Set aside.
  4. In a cast-iron skillet, heat olive oil over high heat. Sear quails on both sides until browned, about 2-3 minutes per side. Transfer the skillet to the oven and cook for 15-18 minutes, or until the quails are cooked through.
  5. Remove the skillet from the oven, brush the quails with the honey and raisin glaze, and sprinkle with sesame seeds. Return the skillet to the oven and broil for 1-2 minutes, or until the sesame seeds are golden brown.
  6. Remove the skillet from the oven and let the quails rest for 5 minutes. Serve hot with remaining honey and raisin glaze on the side.
