Quinoa Salad with Broccoli and Lentils Recipe

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 head broccoli, cut into florets
  • 1 can lentils, drained and rinsed
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the quinoa in cold water and drain.
  2. In a medium saucepan, bring the water to a boil.
  3. Add the quinoa and reduce heat to low, cover the saucepan and simmer for about 15 minutes until the quinoa is tender and the water is absorbed.
  4. While the quinoa is cooking, steam the broccoli for about 5 minutes, until tender but still firm. Set it aside to cool.
  5. In a large mixing bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  6. When the quinoa is done, add it to the mixing bowl with the dressing and toss it together.
  7. Add the lentils, steamed broccoli, diced red onion and chopped parsley to the mixing bowl and toss everything together.
  8. Cool the salad for at least 20 minutes before serving.
