Rack of Lamb Roasted with Vegetables

Ingredients:

  • 1 (8 bone) rack of lamb
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 sprigs fresh rosemary
  • 4 cloves garlic, peeled and minced
  • 1 red onion, cut into wedges
  • 1 sweet potato, peeled and cut into cubes
  • 2 carrots, peeled and cut into chunks
  • 1 parsnip, peeled and cut into chunks
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rub the lamb with olive oil and season with salt and pepper.
