Ricotta and Spinach Tart
Ingredients:
- 1 pre-made pie crust
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bag fresh spinach
- 8 oz. ricotta cheese
- 1/2 cup grated Parmesan cheese
- 3 eggs

Instructions:
