Pandoro Cake Recipe
Ingredients:
- 4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup sugar
- 4 eggs, room temperature
- 1/2 teaspoon salt
- 1 tablespoon active dry yeast
- 1/4 cup warm water
- 1/2 cup milk, room temperature
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
- 1/4 cup icing sugar, for dusting
Instructions:
- In a small bowl, dissolve the yeast in warm water and set it aside for 5 minutes.
- In a large bowl, combine flour and salt. Form a well in the center and add sugar, butter, eggs, milk, vanilla extract and lemon zest. Mix until well combined.
- Add the yeast mixture to the flour mixture, and knead until you get a smooth, elastic dough. Cover the bowl with a kitchen towel and let the dough rise in a warm place for 2 hours.
- Preheat the oven to 350°F (180°C). Grease a pandoro cake mold with butter and dust with flour.
- Knead the dough briefly and place it into the cake mold. Cover the mold with a kitchen towel and let the dough rise again for 30 minutes.
- Bake the cake for 40-45 minutes or until golden brown. Remove from the oven and let the cake cool for 10 minutes.
- Remove the cake from the mold and dust it with icing sugar.
- Serve the pandoro cake sliced with a dollop of whipped cream and some fresh berries.
