Pandoro Cake Recipe

Ingredients:

  • 4 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup sugar
  • 4 eggs, room temperature
  • 1/2 teaspoon salt
  • 1 tablespoon active dry yeast
  • 1/4 cup warm water
  • 1/2 cup milk, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1/4 cup icing sugar, for dusting

Instructions:

  1. In a small bowl, dissolve the yeast in warm water and set it aside for 5 minutes.
  2. In a large bowl, combine flour and salt. Form a well in the center and add sugar, butter, eggs, milk, vanilla extract and lemon zest. Mix until well combined.
  3. Add the yeast mixture to the flour mixture, and knead until you get a smooth, elastic dough. Cover the bowl with a kitchen towel and let the dough rise in a warm place for 2 hours.
  4. Preheat the oven to 350°F (180°C). Grease a pandoro cake mold with butter and dust with flour.
  5. Knead the dough briefly and place it into the cake mold. Cover the mold with a kitchen towel and let the dough rise again for 30 minutes.
  6. Bake the cake for 40-45 minutes or until golden brown. Remove from the oven and let the cake cool for 10 minutes.
  7. Remove the cake from the mold and dust it with icing sugar.
  8. Serve the pandoro cake sliced with a dollop of whipped cream and some fresh berries.
