Risotto with Figs Recipe

Ingredients

  • 1 cup Arborio rice
  • 6 dried figs, chopped
  • 1 cup chicken broth
  • 1 cup vegetable broth
  • 1/2 cup white wine
  • 1 onion, chopped
  • 3 tbsp butter
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large saucepan, heat the chicken and vegetable broth together and keep it simmering.
  2. In another saucepan, heat the butter over medium heat and sauté the onion until translucent.
  3. Add the Arborio rice to the onion and stir for 1-2 minutes.
  4. Add white wine to the rice mixture and stir continuously until the liquid is absorbed.
  5. Add a ladle of hot broth to the rice mixture and stir constantly until the broth is absorbed. Repeat this step with the remaining broth, one ladle at a time, making sure to stir constantly.
  6. When the rice is cooked al dente, add the figs, Parmesan cheese, and parsley. Stir well and season with salt and pepper.
  7. Serve hot with some extra Parmesan cheese on top, if desired.
