Root Vegetable Gratin

Ingredients:

  • 2 lbs. mixed root vegetables (carrots, parsnips, turnips, sweet potatoes, etc.), peeled and sliced
  • 2 tbsp. olive oil
  • 4 tbsp. unsalted butter, divided
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp. all-purpose flour
  • 1 cup milk
  • 1 cup grated Gruyere cheese
  • 1/4 cup breadcrumbs
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 375°F. Grease a large baking dish with butter or cooking spray.
  2. In a large skillet, heat olive oil over medium-high heat. Add sliced root vegetables and sauté until tender, about 10-15 minutes. Season with salt and pepper to taste.
  3. In a separate saucepan, melt 2 tbsp. butter over medium heat. Add onions and sauté until soft and translucent. Add garlic and sauté for an additional 30 seconds.
  4. Add flour and stir to combine. Cook for 1-2 minutes, until mixture is golden brown and fragrant.
  5. Gradually whisk in milk and bring to a simmer, stirring constantly until mixture thickens. Season with salt and pepper to taste.
  6. Add grated cheese to the saucepan and whisk until cheese is melted and smooth. Remove from heat.
  7. Layer half of the sautéed vegetables in the prepared baking dish. Pour half of the cheese sauce over the vegetables. Repeat with remaining vegetables and sauce.
  8. Melt remaining 2 tbsp. butter in a small saucepan. Add breadcrumbs and stir to combine.
  9. Sprinkle breadcrumb mixture over the top of the gratin.
  10. Bake for 30-35 minutes, until gratin is golden brown and bubbling.
  11. Serve hot and enjoy!
