Spaghetti Poor Recipe
Ingredients:
- 1 pound spaghetti
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1-2 small red chili peppers, seeded and chopped
- 1 can (2 oz) anchovy fillets, drained and finely chopped
- 1/2 cup black olives, pitted and halved
- 2 tablespoons capers, drained
- Salt and pepper to taste
- 1/4 cup chopped parsley
Instructions:
- Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
- Meanwhile, in a large skillet, heat olive oil over medium heat. Add garlic and chili peppers and cook for 2-3 minutes or until fragrant.
- Add anchovy fillets to the skillet, stirring for 2-3 minutes until they break down and start to dissolve.
- Add black olives and capers to the skillet. Cook for 2-3 minutes, stirring occasionally, until heated through.
- Drain spaghetti and reserve 1 cup of the cooking water.
- Add spaghetti to the skillet along with 1/4 cup of the reserved cooking water. Toss everything together until well combined. Add more cooking water if necessary to achieve the desired consistency of the sauce.
- Season with salt and pepper to taste. Serve hot, garnished with chopped parsley.
