Saint Joseph’s Zeppole Recipe

Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup all-purpose flour
  • 4 large eggs
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions:

  1. In a medium saucepan, bring water, butter, salt, and sugar to a boil over medium-high heat.
  2. Remove from heat and immediately stir in flour with a wooden spoon until a smooth dough forms.
  3. Return the saucepan to low heat, stirring constantly, for 2-3 minutes to cook the dough slightly. Remove from heat.
  4. Beat the eggs in one at a time, making sure each egg is fully incorporated before adding the next.
  5. Heat about 1 1/2 to 2 inches of vegetable oil in a large pot or Dutch oven to 375°F.
  6. Scoop the batter into a piping bag fitted with a large (about 1/2 inch) tip.
  7. Pipe the batter into 2-inch rounds directly into the hot oil, cutting off the batter with scissors or a knife.
  8. Turn the zeppole with a slotted spoon until they are golden brown on all sides, about 5-6 minutes.
  9. Drain on paper towels, and dust generously with powdered sugar.
