Seafood Carbonara Recipe

Ingredients

  • 1 pound spaghetti
  • 6 ounces pancetta, diced
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound scallops, cleaned
  • 1/2 cup grated parmesan cheese
  • 3 large egg yolks
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped flat-leaf parsley

Instructions

  1. Heat a large pot of salted water to boiling. Cook the spaghetti according to the package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
  2. In a large skillet, cook the pancetta over medium heat until crispy. Add the shrimp and scallops and cook for 3 minutes until they turn pink. Remove from the heat and set aside.
