Sicilian Penne – Delicious


Sicilian Penne Recipe

Ingredients:

  • 1 pound of penne pasta
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon of red pepper flakes
  • 2 teaspoons of dried oregano
  • 1 can of chopped tomatoes
  • 1/2 cup of Kalamata olives, roughly chopped
  • 1/2 cup of capers, drained
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 10-12 minutes. Drain the pasta and set it aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic and sauté until fragrant and softened, roughly 2-3 minutes.
  3. Stir in the red pepper flakes and dried oregano, and let them cook for about 30 seconds until fragrant.
  4. Pour in the can of chopped tomatoes and let everything simmer for about 10 minutes.
  5. Mix in the Kalamata olives, capers, and chopped fresh parsley and let everything simmer for an additional 5 minutes.
  6. Add the cooked penne pasta into the skillet, tossing everything together until well combined. Season with salt and pepper to taste.
  7. Transfer the Sicilian penne to individual plates and serve.
