Ingredients

  • 4 swordfish steaks (about 6 oz each)
  • Salt and pepper, to taste
  • 1/4 cup olive oil
  • 1/2 cup onions, chopped
  • 3 garlic cloves, minced
  • 3 anchovy fillets, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1/4 cup capers, rinsed
  • 1/4 cup green olives, sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F.
  2. Season both sides of swordfish steaks with salt and pepper.
  3. Heat olive oil in a large ovenproof skillet over medium heat.
  4. Add onion and garlic to the skillet and cook until softened, about 3-4 minutes.
  5. Add anchovies, oregano, and red pepper flakes and cook for 1-2 minutes more.
  6. Stir in white wine and diced tomatoes with juice until well combined.
  7. Bring the mixture to a simmer then add capers and olives.
  8. Place swordfish steaks in the skillet and spoon the sauce over them.
  9. Bake in preheated oven for 15-20 minutes or until the swordfish flakes easily with a fork.
  10. Remove skillet from oven and sprinkle with parsley.
  11. Allow the fish to rest for a few minutes before serving.
