Skewers of Veal Saltimbocca

Ingredients:

  • 1 pound of thinly sliced veal
  • 8 thin slices of prosciutto
  • 8 large fresh sage leaves
  • 2 tablespoons of unsalted butter
  • 1 tablespoon of olive oil
  • 1/4 cup of dry white wine
  • Salt and pepper to taste
  • 8 skewers

Instructions:

  1. Preheat your grill or heat up your grill pan.
  2. Cut the veal into 8 thin slices and season with salt and pepper.
  3. On a cutting board, place a slice of prosciutto and a sage leaf on top of it.
  4. Place a slice of veal on top of the sage leaf and roll the prosciutto tightly around the veal.
  5. Repeat the process until all the slices of veal are wrapped.
  6. Using the skewers, pierce the veal saltimbocca and make sure the prosciutto and sage is firmly attached.
  7. In a small saucepan, melt the butter and add the olive oil.
