Soba Noodles Recipe

Soba noodles are thin noodles made from buckwheat flour and usually served in soup or chilled with dipping sauce. This recipe shows you how to make soba noodles from scratch.
Ingredients:
- 1 cup buckwheat flour
- 1/2 cup all-purpose flour
- 1/2 to 3/4 cup water
Instructions:
- In a large bowl, mix together buckwheat flour and all-purpose flour until well combined.
- Add water a little at a time while stirring until the dough forms.
- Knead the dough on a floured surface for about 5 minutes. It should not be too sticky or too dry.
- Roll out the dough with a rolling pin until it is about 1/16 inch thick. Sprinkle with flour as needed.
- Cut the dough into thin strips, about 1/8 inch wide or less.
- Boil water in a large pot and add a pinch of salt. Cook the noodles for 3-5 minutes or until tender. Stir occasionally to prevent sticking.
- Drain the noodles and rinse with cold water. Serve immediately or refrigerate until ready to use.
Verdict: Making soba noodles from scratch is not too difficult and the result is definitely worth it. The freshly made noodles have a great texture and nutty flavor that are not found in store-bought versions.
Serving Suggestions: Serve the soba noodles with a dipping sauce made of soy sauce, mirin, sake, sugar, and grated ginger. You can also add some toppings like green onions, nori, sesame seeds, and wasabi. Alternatively, you can use the noodles in soup dishes like soba noodle soup or cold soba noodle salad.
