Spanish Tagliatelle Recipe
Ingredients
- 500g Tagliatelle pasta
- 2 Red bell peppers
- 1 Yellow bell pepper
- 1 Onion chopped
- 4 Garlic cloves chopped
- 3 Tomatoes chopped
- 200g Chorizo sliced
- 2 tbsp Olive oil
- Salt and pepper to taste
- 1/2 bunch Fresh parsley chopped
Instructions
- Start by roasting red and yellow bell peppers in the oven for 15-20 minutes at 220°C until charred. Remove and place them in a bowl covered with cling film to steam for 10 minutes. Peel them, remove the seeds and slice them into thin strips.
- Boil a pot of salted water and cook tagliatelle pasta according to packet instructions. Drain the pasta and set aside.
- In a large pan, heat olive oil over medium heat. Add chopped onions and garlic and sauté till they become translucent and soft.
- Add sliced Chorizo and cook for 5 to 7 minutes until browned and fragrant.
- Add chopped tomatoes, sliced bell peppers, and season with salt and pepper. Cook for 5 to 7 minutes until the tomatoes have completely broken down.
- Add tagliatelle pasta to the pan and toss everything together, try to coat pasta with the sauce well for 1-2 minutes, or until heated through and combined.
