Ingredients

  • 500g Tagliatelle pasta
  • 2 Red bell peppers
  • 1 Yellow bell pepper
  • 1 Onion chopped
  • 4 Garlic cloves chopped
  • 3 Tomatoes chopped
  • 200g Chorizo sliced
  • 2 tbsp Olive oil
  • Salt and pepper to taste
  • 1/2 bunch Fresh parsley chopped

Instructions

  1. Start by roasting red and yellow bell peppers in the oven for 15-20 minutes at 220°C until charred. Remove and place them in a bowl covered with cling film to steam for 10 minutes. Peel them, remove the seeds and slice them into thin strips.
  2. Boil a pot of salted water and cook tagliatelle pasta according to packet instructions. Drain the pasta and set aside.
  3. In a large pan, heat olive oil over medium heat. Add chopped onions and garlic and sauté till they become translucent and soft.
  4. Add sliced Chorizo and cook for 5 to 7 minutes until browned and fragrant.
  5. Add chopped tomatoes, sliced bell peppers, and season with salt and pepper. Cook for 5 to 7 minutes until the tomatoes have completely broken down.
  6. Add tagliatelle pasta to the pan and toss everything together, try to coat pasta with the sauce well for 1-2 minutes, or until heated through and combined.
