Spicy Spaghetti Nests

Ingredients:

  • 1 lb. spaghetti
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons red pepper flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Cook spaghetti according to package directions; drain and set aside.
  3. In a large skillet over medium heat, heat olive oil. Add onion and garlic and cook until soft, about 5 minutes.
  4. Add red pepper flakes, oregano, salt, and black pepper and cook for 1 minute.
  5. Add diced tomatoes and chicken broth and bring to a simmer.
  6. Simmer for 10 minutes, stirring occasionally.
  7. Add spaghetti to sauce and toss to coat.
  8. Grease a muffin tin with cooking spray. Using tongs, twirl the spaghetti into 10-12 nests and place them into muffin cups.
  9. Bake for 15-20 minutes or until the spaghetti nests are golden brown on the edges.
  10. Sprinkle with Parmesan cheese and chopped parsley before serving.
