Spicy Spaghetti Nests
Ingredients:
- 1 lb. spaghetti
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 teaspoons red pepper flakes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
- 1/2 cup grated Parmesan cheese
Instructions:
- Preheat oven to 375 degrees F.
- Cook spaghetti according to package directions; drain and set aside.
- In a large skillet over medium heat, heat olive oil. Add onion and garlic and cook until soft, about 5 minutes.
- Add red pepper flakes, oregano, salt, and black pepper and cook for 1 minute.
- Add diced tomatoes and chicken broth and bring to a simmer.
- Simmer for 10 minutes, stirring occasionally.
- Add spaghetti to sauce and toss to coat.
- Grease a muffin tin with cooking spray. Using tongs, twirl the spaghetti into 10-12 nests and place them into muffin cups.
- Bake for 15-20 minutes or until the spaghetti nests are golden brown on the edges.
- Sprinkle with Parmesan cheese and chopped parsley before serving.
