Stew from the Sea

Ingredients

  • 2 lbs seafood mix (shrimp, scallops, mussels, calamari)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can of diced tomatoes
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
  3. Add seafood mix and cook for 3-4 minutes or until lightly browned.
  4. Add chicken broth, diced tomatoes, paprika, cumin, dried thyme, cayenne pepper, salt, and black pepper.
  5. Bring to a simmer and let cook for about 10-15 minutes until seafood is cooked through.
  6. adjust seasoning to taste and garnish with fresh parsley. Serve hot.
