Stew from the Sea
Ingredients
- 2 lbs seafood mix (shrimp, scallops, mussels, calamari)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can of diced tomatoes
- 1 cup chicken broth
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
- Add seafood mix and cook for 3-4 minutes or until lightly browned.
- Add chicken broth, diced tomatoes, paprika, cumin, dried thyme, cayenne pepper, salt, and black pepper.
- Bring to a simmer and let cook for about 10-15 minutes until seafood is cooked through.
- adjust seasoning to taste and garnish with fresh parsley. Serve hot.
