  • 1lb dried stockfish
  • 6 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, sliced

Instructions:

  1. Soak the dried stockfish in water overnight, changing the water at least once. Rinse the stockfish thoroughly and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 3-4 minutes until softened. Add the tomato paste and stir to combine. Add the water, bay leaf, salt, and black pepper and bring to a boil.
  3. Once the mixture is boiling, add the stockfish and lemon slices. Reduce heat to low and simmer for 30-40 minutes until the stockfish is cooked through and soft. Remove the bay leaf and discard.
  4. Serve the stockfish hot with a side of vegetables or rice. Enjoy!
