Strawberry Cheesecake Recipe
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup white sugar
- 1/3 cup butter, melted
- 2 cups fresh strawberries, sliced
- 1/4 cup white sugar
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes. Set aside to cool.
- In a small saucepan, cook strawberries and 1/4 cup sugar over medium heat until the sugar has dissolved and the mixture has thickened. Set aside to cool.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
- Pour the cream cheese mixture over the cooled crust.
- Drizzle the cooled strawberry mixture on top of the cream cheese mixture and swirl with a knife.
- Bake for 45 minutes or until the edges are set and the center is slightly jiggly. The cheesecake will continue to set as it cools.
- Let the cheesecake cool in the pan, then chill in the refrigerator for at least 2 hours before serving.
