Strawberry Cheesecake Recipe

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup white sugar
  • 1/3 cup butter, melted
  • 2 cups fresh strawberries, sliced
  • 1/4 cup white sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes. Set aside to cool.
  4. In a small saucepan, cook strawberries and 1/4 cup sugar over medium heat until the sugar has dissolved and the mixture has thickened. Set aside to cool.
  5. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Pour the cream cheese mixture over the cooled crust.
  7. Drizzle the cooled strawberry mixture on top of the cream cheese mixture and swirl with a knife.
  8. Bake for 45 minutes or until the edges are set and the center is slightly jiggly. The cheesecake will continue to set as it cools.
  9. Let the cheesecake cool in the pan, then chill in the refrigerator for at least 2 hours before serving.
