Stuffed Squid with Blueberry Sauce Recipe

Ingredients:

  • 4 large squid
  • 1 cup cooked white rice
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 cup blueberries
  • 2 tbsp honey
  • 1/4 cup water
  • 1 tbsp cornstarch

Instructions:

  1. Preheat oven to 400°F.
  2. Clean the squid thoroughly and remove the head and tentacles. Set aside.
  3. In a bowl, combine cooked rice, onions, celery, carrots, garlic, salt, and black pepper. Mix well.
  4. Stuff each squid with the rice mixture and close the opening with a toothpick.
  5. Place stuffed squid in a baking dish and sprinkle breadcrumbs on top.
  6. Drizzle olive oil on top of the breadcrumbs.
  7. Bake for 25-30 minutes or until the squid is cooked and golden brown.
  8. While the squid is cooking, make the blueberry sauce.
  9. In a saucepan, add the blueberries, honey, and water. Bring to a boil over medium heat.
  10. In a small bowl, mix cornstarch with 2 tablespoons of water until smooth.
  11. Add the cornstarch mixture to the blueberry sauce and stir well until thickened.
  12. Remove the squid from the oven and serve hot with the blueberry sauce on the side.
