Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, whisk together the flour, salt, and sugar (if using).
  2. In a separate bowl, beat the eggs, then add the milk and water.
  3. Slowly pour the egg mixture into the flour mixture while whisking continuously until smooth and well combined. The consistency should be similar to heavy cream so if it’s too thick, add more water.
  4. Stir in the melted butter and let the batter sit for at least 10 minutes at room temperature before cooking.
  5. Heat a non-stick skillet or crepe pan over medium-high heat. Once hot, ladle 1/4 cup of batter into the pan and swirl it around to create a thin, even layer.
  6. Cook for about 1-2 minutes until the edges start to curl and the bottom is golden brown.
  7. Flip the crepe over and cook for another 30-60 seconds or until lightly browned on the other side.
  8. Repeat with the remaining batter, stacking the cooked crepes on a plate or keeping them warm in a 200°F oven until ready to serve.
  9. For sweet crepes, fill with your favorite fruit and whipped cream or nutella and banana. For savory crepes, fill with ham and cheese, spinach and ricotta, or chicken and mushroom.
