Tonus Soup – Treat Recipe

Ingredients:

  • 1 chicken breast, cooked and shredded
  • 2 cups chicken broth
  • 1 large potato, peeled and diced
  • 2 carrots, peeled and diced
  • 1 celery stalk, diced
  • 1 onion, diced
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/2 cup frozen green peas

Directions:

  1. In a large saucepan, heat the butter over medium heat. Add the onion, celery, and carrots and sauté until the onions are translucent and the vegetables are tender, about 5 minutes.
  2. Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes, until it begins to brown.
  3. Add the chicken broth to the pot and stir until the mixture thickens and begins to boil.
  4. Add the potato, shredded chicken, salt, pepper, thyme, and rosemary to the soup. Cover and simmer for 15-20 minutes or until the potato is tender.
  5. Stir in the frozen peas and simmer for another 5-10 minutes or until they are cooked through.
  6. Pour the milk into the pot, and stir until heated through. Taste the soup and adjust seasoning as needed.
  7. Ladle the soup into bowls and serve hot.
