Tripe: Spanish Recipe

Ingredients:

  • 2 lbs of tripe
  • 2 onions
  • 4 cloves of garlic
  • 2 bay leaves
  • 1 tsp of paprika
  • 1 tsp of ground cumin
  • 1/2 tsp of ground cloves
  • 2 tbsp of olive oil
  • 4 cups of water
  • salt and pepper to taste

Instructions:

  1. Clean the tripe by running it under cold water and removing any excess fat or membrane. Cut it into small pieces and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onions and garlic and sauté for about 5 minutes, or until they are soft and translucent.
  3. Add the tripe, bay leaves, paprika, ground cumin, ground cloves, salt, pepper, and water to the pot. Stir to combine and bring the mixture to a boil. Reduce the heat to low and let the tripe simmer for about 1 to 2 hours, or until it is tender and cooked through.
