Veal Rolls with Mushrooms Recipe
Ingredients:
- 4 veal cutlets, pounded thin
- 2 cups of sliced mushrooms
- 1/2 cup chopped onion
- 2 cloves of minced garlic
- 1/2 cup of dry white wine
- 1/2 cup of chicken broth
- 1/4 cup of all purpose flour
- 2 tablespoons of olive oil
- 1 tablespoon of butter
- Salt and pepper to taste
- 4 toothpicks
Instructions:
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Add the sliced mushrooms, chopped onions and minced garlic. Sauté until the mushrooms and onions are tender, about 5-7 minutes.
- Stir in the flour and cook for 2 minutes. Gradually add the white wine and chicken broth, stirring constantly to prevent lumps from forming.
- Reduce the heat to low and let the sauce simmer for 5 minutes. It should thicken up nicely.
- Lay the veal cutlets flat on a work surface and sprinkle with salt and pepper. Place a spoonful of the mushroom sauce on top of each cutlet.
- Roll up the cutlet and secure it with a toothpick.
- Heat up the remaining olive oil in a large skillet over medium-high heat. Add the veal rolls and sear on all sides, about 2-3 minutes per side.
- Reduce the heat to low and pour in the remaining mushroom sauce. Cover the skillet and let the veal cook for 20-25 minutes, until fully cooked.
- Remove the toothpicks from the veal rolls, and serve with the mushroom sauce on top.
Serving Suggestions:
Serve the veal rolls alongside some roasted potatoes or vegetable medley for a well-rounded meal. This dish pairs great with a glass of dry white wine. Enjoy!
