Veal Rolls with Mushrooms Recipe

Ingredients:

  • 4 veal cutlets, pounded thin
  • 2 cups of sliced mushrooms
  • 1/2 cup chopped onion
  • 2 cloves of minced garlic
  • 1/2 cup of dry white wine
  • 1/2 cup of chicken broth
  • 1/4 cup of all purpose flour
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter
  • Salt and pepper to taste
  • 4 toothpicks

Instructions:

  1. In a large skillet, heat the olive oil and butter over medium-high heat.
  2. Add the sliced mushrooms, chopped onions and minced garlic. Sauté until the mushrooms and onions are tender, about 5-7 minutes.
  3. Stir in the flour and cook for 2 minutes. Gradually add the white wine and chicken broth, stirring constantly to prevent lumps from forming.
  4. Reduce the heat to low and let the sauce simmer for 5 minutes. It should thicken up nicely.
  5. Lay the veal cutlets flat on a work surface and sprinkle with salt and pepper. Place a spoonful of the mushroom sauce on top of each cutlet.
  6. Roll up the cutlet and secure it with a toothpick.
  7. Heat up the remaining olive oil in a large skillet over medium-high heat. Add the veal rolls and sear on all sides, about 2-3 minutes per side.
  8. Reduce the heat to low and pour in the remaining mushroom sauce. Cover the skillet and let the veal cook for 20-25 minutes, until fully cooked.
  9. Remove the toothpicks from the veal rolls, and serve with the mushroom sauce on top.

Serving Suggestions:

Serve the veal rolls alongside some roasted potatoes or vegetable medley for a well-rounded meal. This dish pairs great with a glass of dry white wine. Enjoy!
