Veal Stew with Mushrooms Recipe

Ingredients:

  • 2 lbs veal, cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 1 cup beef broth
  • 1 cup dry red wine
  • 2 tbsp tomato paste
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp all-purpose flour
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the veal cubes and cook until browned on all sides, about 5 minutes.
  3. Remove the veal from the pot and set aside.
  4. Add the onions and garlic to the pot and cook until softened, about 3 minutes.
  5. Add the mushrooms and cook until they release their liquid, about 5 minutes.
  6. Sprinkle the flour over the vegetables and stir to combine.
  7. Add the beef broth, red wine, tomato paste, fresh thyme, and salt and pepper to taste.
  8. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes.
  9. Return the veal cubes to the pot and continue to simmer for 1-2 hours or until the veal is tender.
  10. Adjust seasoning to taste and serve hot.
