Veal Tagine: Family Recipe
Ingredients:
- 1 kg of veal, cut into pieces
- 3 onions, finely chopped
- 4 cloves of garlic, minced
- 2 tbsp of vegetable oil
- 1 tsp of ground ginger
- 1 tsp of ground turmeric
- 1 tsp of ground cinnamon
- 1 tsp of ground cumin
- 1 tsp of paprika
- 1 tsp of salt
- 1 tsp of black pepper
- 500 ml of chicken or beef stock
- 50 g of dried apricots
- 50 g of raisins
- 50 g of almonds
- 2 tbsp of honey
- 2 tbsp of chopped coriander, to garnish
Instructions:
- Heat the oil in a large, heavy-based pan, and brown the veal pieces on all sides, then remove from the pan.
- Lower the heat and add the chopped onions and garlic to the pan, cooking until the onions are soft and translucent.
- Add all the spices to the onions, continuing to stir for a few minutes until fragrant.
- Add the browned veal back into the pan, then pour over the chicken or beef stock. Bring everything to the boil, then reduce the heat and let simmer for one hour.
- Add the dried apricots, raisins, almonds, and honey to the pan, stirring to combine.
- Cover the pan with a lid and let everything simmer for a further 30 minutes, or until the veal is very tender and the fruits have plumped up in the sauce.
- Serve the veal tagine hot, garnished with chopped coriander.
