Ingredients

  • 1 can chickpeas, drained and rinsed

Instructions

  1. Preheat oven to 375°F.
  2. In a food processor, pulse the cooked quinoa and chickpeas until they form a coarse paste.
  3. In a large mixing bowl, combine the quinoa and chickpea mixture with breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, olive oil, salt, and pepper.
  4. Roll the mixture into 1 1/2-inch balls and place them on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes until lightly golden and crispy.
