Veggie Balls Recipe

Ingredients:

  • 1 cup cooked brown rice
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated parmesan cheese
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil

Instructions:

  1. In a large bowl, mix together the cooked rice, grated carrots, grated zucchini, chopped onion, minced garlic, breadcrumbs, fresh parsley, grated parmesan cheese, beaten eggs, salt, and black pepper.
  2. Form the mixture into balls using your hands or a cookie scoop.
  3. Roll the balls in the all-purpose flour to coat.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the veggie balls to the skillet and cook, turning occasionally, until golden brown and crispy on all sides, about 10-12 minutes.
  6. Remove from the skillet and serve with your favorite dipping sauce or on top of a bed of sautéed vegetables.
