Veggie Balls Recipe
Ingredients:
- 1 cup cooked brown rice
- 1 cup grated carrots
- 1 cup grated zucchini
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup grated parmesan cheese
- 2 eggs, beaten
- 1 teaspoon salt

- 1/2 cup all-purpose flour

Instructions:
- In a large bowl, mix together the cooked rice, grated carrots, grated zucchini, chopped onion, minced garlic, breadcrumbs, fresh parsley, grated parmesan cheese, beaten eggs, salt, and black pepper.
- Form the mixture into balls using your hands or a cookie scoop.
- Roll the balls in the all-purpose flour to coat.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the veggie balls to the skillet and cook, turning occasionally, until golden brown and crispy on all sides, about 10-12 minutes.
- Remove from the skillet and serve with your favorite dipping sauce or on top of a bed of sautéed vegetables.
