Ingredients:

  • 4 white onions
  • 1/2 cup bulgur
  • 1/2 cup raisins
  • 1/2 cup chopped parsley
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground allspice
  • 1/4 cup vegetable broth

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Peel the onions, and cut off the tops and bottoms. Cut a small slice from the bottom to make them stand straight.
  3. Scoop out the center of the onions, leaving about a 1/2-inch thick wall. Keep the scooped out onions for later.
  4. Bring a pot of water to a boil and add the hollowed onions. Boil for 5 minutes, then drain.
  5. In a bowl, mix together the bulgur, raisins, parsley, olive oil, salt, black pepper, cinnamon, and allspice. Add the scooped out onions and mix well.
  6. Stuff the mixture into the hollowed onions, packing it tightly.
  7. Place the stuffed onions in an oven-safe dish and add the vegetable broth to the bottom of the dish.
  8. Cover the dish with foil and bake for 45 minutes.
  9. Remove the foil and bake for another 10-15 minutes, or until the onions are tender and the bulgur is cooked through.
