Zenne Pot – Treat Recipe

Ingredients:

  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 cup of chopped carrots
  • 1 cup chopped potatoes (optional)
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • ½ tsp chili powder
  • 1 tbsp olive oil
  • 1 can diced tomatoes (14 oz can)
  • 1 cup chicken broth
  • 1 can black beans, drained and rinsed (15 oz can)
  • 1 cup frozen corn
  • 1/4 cup chopped fresh parsley
  • 1 small lime, juiced

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned. Remove from pot and set aside.
  3. Add the onions, garlic, red pepper, green pepper, carrots, potatoes (optional) and cook until they start to soften, about 5-8 minutes.
  4. Add the diced tomatoes, chicken broth, smoked paprika, cumin, oregano, salt, chili powder and black beans and stir to combine well.
  5. Bring to a simmer and add the cooked chicken back to the pot.
  6. Add the frozen corn and simmer until the vegetables are tender and the chicken is cooked through, about 15-20 minutes.
  7. Stir in the chopped parsley and lime juice. Serve hot.
