Zenne Pot – Treat Recipe
Ingredients:
- 1 lb chicken breast, diced
- 1 onion, chopped
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 cup of chopped carrots
- 1 cup chopped potatoes (optional)
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt

- 1 cup chicken broth
- 1 can black beans, drained and rinsed (15 oz can)
- 1 cup frozen corn
- 1/4 cup chopped fresh parsley
- 1 small lime, juiced
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add chicken and cook until browned. Remove from pot and set aside.
- Add the onions, garlic, red pepper, green pepper, carrots, potatoes (optional) and cook until they start to soften, about 5-8 minutes.
- Add the diced tomatoes, chicken broth, smoked paprika, cumin, oregano, salt, chili powder and black beans and stir to combine well.
- Bring to a simmer and add the cooked chicken back to the pot.
- Add the frozen corn and simmer until the vegetables are tender and the chicken is cooked through, about 15-20 minutes.
- Stir in the chopped parsley and lime juice. Serve hot.
