Zucchini Roll Recipe

Ingredients:

  • 2 medium-sized zucchinis
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup chopped fresh basil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce

Instructions:

  1. Preheat the oven to 375°F. Grease a baking sheet with cooking spray.
  2. Using a mandolin, slice the zucchinis lengthwise into 1/8-inch-thick slices.
  3. In a bowl, mix together ricotta cheese, Parmesan cheese, egg, basil, garlic, salt, and pepper.
  4. Spread a thin layer of the ricotta mixture onto each zucchini slice.
  5. Roll each slice tightly and place seam-side down on the prepared baking sheet.
  6. Spoon marinara sauce over each roll.
  7. Bake the zucchini rolls for 15-20 minutes, or until the sauce is bubbly and the zucchini is tender.
