Zucchini, Tomato and Sausage Lasagna Recipe
Ingredients:
- 1 pound sweet Italian sausage, casings removed
- 1 large zucchini, sliced into 1/4-inch rounds
- 2 cups spaghetti sauce
- 1 can diced tomatoes, drained
- 1/2 cup water
- 1 tablespoon olive oil
- 8 lasagna noodles, cooked
- 2 cups ricotta cheese
- 1 egg, beaten
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese

Instructions:
- Preheat oven to 375°F. Grease a 9×13-inch baking dish.
- In a large skillet, cook the sausage over medium-high heat until browned, breaking up the meat with a spoon. Remove sausage to a bowl and set aside.
- In the same skillet, add the zucchini and cook until slightly softened, about 5 minutes. Add the spaghetti sauce, diced tomatoes and water. Bring to a simmer and cook for 10-15 minutes or until zucchini is tender.
- In a separate bowl, combine the ricotta cheese, beaten egg and Parmesan cheese. Season with salt and pepper to taste.
- To assemble the lasagna, spread a small amount of tomato sauce on the bottom of the prepared baking dish. Arrange 4 lasagna noodles on top of the sauce. Spread half of the ricotta mixture over the noodles. Top with half of the sausage mixture. Repeat layers, ending with the remaining tomato sauce and shredded mozzarella cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 20-25 minutes or until cheese is melted and bubbly.
- Let the lasagna cool for 10-15 minutes before serving.
