Aloo palak – Treat


Aloo Palak – Indian Spinach and Potato Curry

Ingredients:

  • 2 large potatoes, peeled and diced
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon ginger paste
  • 2 green chilies, chopped
  • 2 teaspoons coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 6 cups spinach, washed and chopped
  • 1/2 cup water
  • 1 tablespoon cream (optional)

Instructions:

  1. Heat oil in a deep pan and add the cumin seeds. When they start to sizzle, add the onions and sauté until golden brown.
  2. Add the garlic, ginger paste and green chilies and sauté for another minute.
  3. Add the coriander powder, turmeric powder, garam masala and salt and sauté for another minute.
  4. Add the diced potatoes and cook for 5 minutes, stirring occasionally.
  5. Now add the chopped spinach and water. Mix everything well. Cover the pan and cook for 10 minutes or until the potatoes are tender.
  6. If the curry looks too dry, add some more water.
  7. Finally, add the cream and stir gently.
  8. Remove from heat and serve hot with rice or naan.
