Anchovy and Sage Fritters Recipe

Ingredients

  • 1 can of anchovy fillets
  • 1 cup of all-purpose flour
  • 1 cup of sparkling water
  • 1 egg
  • 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of chopped fresh sage
  • Vegetable oil for deep frying

Instructions

  1. Drain the anchovy fillets and pat them dry with a paper towel.
  2. In a large mixing bowl, combine the flour, garlic powder, salt, black pepper, and fresh sage. Mix well.
  3. Beat the egg in a separate bowl. Add the sparkling water and mix until well combined.
  4. Slowly add the wet ingredients into the dry ingredients while whisking constantly until the batter is smooth and free of lumps.
  5. Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 375°F (190°C).
  6. Dip each anchovy fillet into the batter, making sure it is coated evenly.
  7. Carefully drop the battered anchovy fillets into the hot oil, a few at a time, and fry until golden brown and crispy, about 2-3 minutes.
  8. Remove the fritters from the oil with a slotted spoon and place them on a paper towel-lined plate to absorb any excess oil.
